Curry Tuna Handrolls

Let me tell you: if I worked from home, this is what I would eat every single day. Similar to onigiri, this is a great lunch for plenty of reasons but cuts down on the rice a bit so the protein really shines. I’ve been really into tinned fish for a while now and a recent find, tuna packed in olive oil and curry, immediately triggered recipe ideas. I didn’t want to just plop this one on bread. I wanted to make something. I previously used a tin of this tuna to make a bangin sandwich, but these handrolls really felt like having more fun with the curry flavor.

First, mix the curry tuna with kewpie mayo til it reaches the desired consistency. Cut seaweed sheets in half (I think I made 6 handrolls with one tin of tuna) and start layering: romaine lettuce, seasoned sushi rice, tuna mixture, black sesame, and chili crisp. Then roll up and enjoy.

I thing of handrolls as a restaurant dish and always with raw fish. But this is something that can so easily be made at home. It’s an ultra satisfying alternative to a sandwich.
